Oven Roasted Red Potatoes // A Recipe

I found this yummy recipe on allrecipes, but I tweaked it a little here and there. I didn't have the onion soup mix on hand, so I used the Ranch dressing mix instead. It was so easy and delish - I had to sneak a few bites before we even sat down for dinner! Great with meatloaf or baked chicken too.


- 4 lbs. red potatoes, cut into wedges
- 1 envelope dry onion soup mix (or dry Ranch dressing mix)
- 1/3 cup olive oil
- garlic salt and pepper, to taste 
- Italian seasoning, to taste (optional)


In a gallon-sized Ziploc plastic bag, combine the soup mix, olive oil, salt and pepper, seasoning and red potatoes. Close bag, and shake until potatoes are fully covered. Pour potatoes onto two cookie sheets, covered with foil and sprayed with cooking spray. Bake at 350 degrees for 30 minutes, stirring every 15 minutes. Bake at 400 degrees for an additional 30 minutes, stirring every 15 minutes.

Yield: 16 servings
