The perfect Valentine's dinner (or any day, for that matter). Just like the one at The Old Spaghetti Factory - it's a favorite around here!
- 1 (16 oz.) box spaghetti noodles
- 1 cup (2 sticks) butter
- 1 cup Mizithra cheese, shredded
Cut butter into tablespoon-sized pieces and place in a 2-quart saucepan. Bring butter to a slow boil on medium heat (about 5 minutes). Once the butter begins to boil, stir constantly to prevent residue from sticking to the bottom of the pan. As the butter cooks, it will start to foam and rise. Continue stirring (about 5 minutes), otherwise the butter foam could overflow and catch fire. Once the butter stops foaming and rising, cook until amber in color (about 1 to 2 minutes). Remove from heat and pour into a cool container to stop the cooking process. Boil spaghetti until al dente; drain and return to pan. Toss pasta with brown butter. Sprinkle with Mizithra cheese to taste.
